Helen is an Associate Professor in the History Department at Michigan State University. She specializes in the history of food and nutrition in the nineteenth and twentieth centuries. Helen earned her Ph.D. from Yale University in 2008. In relation to MATRIX, Helen is the director of the What America Ate project, which will create a digital archive and website on food-related materials during the Great Depression era.
Helen is the author of three books: Modern Food, Moral Food: Self-Control, Science, and the Rise of Modern American Eating in the Early Twentieth Century, Food in the Civil War Era: The North, and Food in the Civil War Era: The South.
